Coconut Cupcakes from Ina and Me

I heard that cupcakes are waning in popularity.  Have you heard that rumor?  I say that cupcakes are here to stay.  They are just the right size to satisfy a sweet tooth after a meal.  When there are a variety of different cupcakes available, it can work out very well to share.  That was going on around the bridal luncheon table on Saturday.  By plan or happenstance, four different and luscious cupcakes arrived in the farm's kitchen that day.  One guest suggested sharing and it caught on.  



I've made Ina's coconut cupcakes many times and they always please.  You can easily make them ahead of time and freeze them without the icing.

They were real showoffs with happy brides and grooms cavorting about on pretty cut glass pedestals.
